Miso paste is made of fermented soy, barley or rice malt. It has a reputation in the Far East as one of the natural most healing foods because of the fermentation which aids in digestion and overcoming acidity. Mirin is a condiment used in Japanese cooking which is kind of sweet rice wine similar to sake. It gives glazed appearance, sweetness and distinct flavor to broccoli in this dish. The combination of miso and mirin combined with sesame seeds creates a perfect marriage of acidity, saltiness, sweetness and nuttiness.
